Gotta have:
3/4 pound boneless, skinless chicken meat
3 T veggie oil
2 14oz. cans of coconut milk
2 C water
2T minced ginger root (or just freakin' ginger powder...or no ginger at all...)
4T fish sauce
1/4 T lime juice
1/4 T chilli powder
1/4 t ground turmeric
2T thinly sliced scallions
1T chopped cilantro (optional, because I hate cilantro...)
1. Cut the chicken into thin strips and sautee in the freakin' oil for 2 or 3 minutes- or
until it turns white
2. Bring coconut milk AND water to a boil in a large pot (or any pot).
Reduce the heat. Add the ginger, fish sauce, lime juice, chili powder, and turmeric. simmer
for 10 to 15 minutes, or until the chicken is done.
3. Sprinkle with scallions and fresh (sick) cilantro and serve steaming hot. Be sure to provide
ointment for any burn victims...
